Super simple parsley dressing
This dressing is incredibly simple but it packs a lot of flavour to any dish. I have dollops of it over quinoa and roasted sweet potato, tossed with steamed vegetables or with some bread as a dip. It’s incredibly flavoursome and it just makes a plate of food sing.
I would suggest to go easy on the garlic at first as it is raw and it can make a big impact if you add too much.

50g flat leaf parsley
1/2 clove of garlic
1-2 tbsp olive oil
I use a pestle and mortar to make this dressing but a electric mixer would work just as well. To start I add the garlic and parsley to the pestle and mortar with a pinch of salt and start macerating. When everything is mashed up I add the zest and juice of the lemon, the olive oil and mix it. At this point I check the taste and adjust the flavour depending in what I think it needs. Too acidic then I add more oil, too bland then I add another pinch of salt or lemon juice. Its very simple and it lasts in the fridge in a air tight container for 1-2 days.
Ps: you can also make the exact same thing using coriander. It works a treat!
